
Freeze Pizza Dough?
Can you freeze pizza dough? Absolutely! Freezing pizza dough is an easy way to prepare ahead for your next pizza night and have homemade pizza ready when you need it. Make a larger batch of dough, pop it in the freezer and simply take it out whenever you’re craving pizza.
Three Tips for Freezing Your Pizza Dough
Making a large batch of pizza dough and freezing it for later is a great idea. There are three different ways to freeze your dough, but we recommend Option 1 for the best results.
1. Freeze as Pizza Dough Balls
Follow our recipe until it's time to shape and bake the pizzas. Divide the dough into 230 g dough balls and let them complete their final proof. It's very convenient to place each dough ball in a separate lightly oiled 0.5 L plastic container. The dough balls are ready to freeze once they have fully risen. If you're using the rain gauge method, freeze them when they have reached 27 mm.
On the day you plan to bake, transfer the containers from the freezer to the refrigerator in the morning. Then, about 2–3 hours before baking, remove the dough from the fridge and let it come to room temperature.
2. Freeze the Pizza Bases
Alternatively, you can follow the recipe all the way through shaping the pizza bases. Once the bases have been rolled or stretched out, do not let them proof. Instead, wrap them and place them in the freezer immediately.
To prevent them from drying out, lightly brush the bases with olive oil, wrap them tightly in plastic wrap, and freeze them flat on baking paper placed on a baking tray or board.
When you're ready to make pizza, thaw the bases for 1–2 hours, depending on their thickness. If necessary, roll or stretch the dough a little more before adding your toppings and baking.
3. Bake and Freeze
You can also go one step further by baking the pizza bases before freezing them. This way, you'll have ready-baked pizza bases waiting in the freezer.
When you're ready for pizza, simply add your favourite toppings and bake. There's no need to wait for the bases to thaw. Quick, easy, and convenient.
